Kitchen Ventilation

In order to provide the essential internal air quality for people's life in the kitchen; to provide the air quality  about the procedures to be carried on in the kitchen. to provide external air quality by clean gases is exhausted to the environment; needed ventilation to ensure continuity of health conditions. These all above requirements for the kitchen are provided by the systems that called kitchen ventilation and air conditioning. Needed ventilation for the kitchen is direct proportion to volume (velocity and amount of activities) and area of the operations.

Natural ventilation systems:

Natural ventilation is a process that kitchens are ventilated with the thermal effect of the air.

Forced ventilation systems:

If there is no enough thermal flow for ventilation in the kitchens, forced ventilation systems are used for the solution. Ventilation is provided by exhaust ventilation in the operation field. A close amount  to the exhausted air must be pressed to the ambient.

There are a couple of contaminant and smell in the exhaust air of kitchens. For this reason, it is very important to be prevented from this unintentional spread. In order to prevent this unintentional spread, collection of exhaust gasses and distribution of fresh air must done carefully. Moreover, the exhaust points and kitchen must be at negative pressure. Furthermore, the contamination, condensation and cleaning problems of exhaust ducts must be handled in the forced ventilation systems. Also, fire safety measures must be taken. In the light of above information, the kitchen ventilation consist of more than one devices. In other words, kitchen ventilation is a compound of comfort and process ventilation. Ventilation requirements of kitchen ventilation is considered depending on the operation area, operation volume and the compound of ventilation system.
